This is it! Your loaves should be nice and full now! Turn up the oven and let it preheat to 500 degrees. Make sure it is preheated before you put the bread in there! Stick a pan that has a rim in the lower rack while you're at it! This will be used for water to create a steamy environment for the bread to really rise.
Look at those perfect little balls of dough. Now give them a big slash across the top. Or two or three. Whatever you want here. Just make sure you slash so it has enough rising power.
Now stick your bread in the oven and shut the door. Grab 2 cups of water and pour it in the lower pan and quick! shut the door!
Set your timer for 35 minutes and wait for the smell to fill up your whole house. Check on your bread after 35 minutes and if it is dark golden brown you can take it out and let it cool on a rack. I've also allowed it to cool on the pan and that's ok too. The bottom of your bread should make a hollow thump noise when it is done.
Let it cool for about an hour and then savor the goodness.
