Tummy woes

I just recently discovered that my body is rejecting all things dairy (all of a sudden). So, I've had to learn a new way of eating and it's definitely challenging me. I usually have something dairy (cheese, milk, butter, yogurt) with every meal! I made this pasta the other day and it was surprisingly good.
They had these heirloom tomatoes on sale at Trader Joe's and I couldn't resist.

I threw them in to a bowl and seasoned with sea salt, garlic and pepper and let it marinate for a little while.
While the tomatoes marinated I started cooking some pasta. Then, took some big fat pieces of basil, cut them up and threw them in to my tomatoes (yeah, I didn't use the wilted pieces, don't worry!).

Next, I chopped up some garlic and sauted it with some olive oil. Then I drained my pasta, reserving about a 1/4 cup of the starchy water, and mixed it right into the pan with the garlic and oil; gave it a good swirl and seasoned with a little S + P (again, to taste).
Crumble some goat cheese over the top (goat cheese works for me because it has less dairy than other cheese. . . ..thank goodness!)
Threw it all into a big bowl and tossed with the marinated tomatoes.
Easy peasy!!

Yum! I will have to try that! I haven't been eating dairy for over 2 months because Hailey seems to react when I do. Sorry you are having problems all of a sudden! What do the doctors think it is? I highly recommend the drunken goat cheese at Whole Foods. It is spendy, but has a lot of flavor so you don't need to use much of it. It's a hard goat cheese with wine rubbed casing that is really good tomeat as well.
