Mission Complete

Step 1: find the perfect cake recipe
I spent a lot of time searching for the perfect cake recipe. It takes a special kind of cake to hold up to the flipping, flopping and frosting that a wedding cake requires!
After trying 3 different recipes (this was not Chris's favorite part of the process. . . . . .the first cake tasted fine to him. . . .as did the second and third), I finally landed on one and I am thrilled with the results! The cake is moist and chocolatey (is that a word?) and tastes even better with a layer of cream cheese frosting (per Monica's request) in the middle!

I cleaned this sucker out about 10 times in the process.

Tomorrow I will introduce you to my partner in crime, Suzanne. She's helping me bake the bottom layers tomorrow. We're going to test out some buttercream icing recipes that will create a smooth looking surface without using fondant, because the last fondant cake I made started to melt in the heat and I'm not about to risk that on a wedding cake!
Chris and Micah are in Illinois this week visiting his parents and grandparents. They left yesterday and it feels like they've been gone for a week! I finished my accounting projects, cleaned the house and organized my board meeting files in one afternoon. That was after a Costco run and before an impromptu trip to the Prudential Center with my good friend Sarah and her little newbie, Henry! I feel super accomplished, but I really MISS my boys!
