Now you're probably looking at the picture and thinking so what's the big deal? That doesn't look outrageously delicious! In fact, it looks kind of odd. . . .
But seriously, once you sink your mouth into this surprisingly healthy and delicious little dish you will question no more!
- Tomatoes for puree (I used 6 small Campari tomatoes)
- Tomato Paste (about a Tbs or so)
- Fresh Garlic (nothing better!)
- Olive Oil
- Sugar (a few pinches to taste)
- Coarse Salt (I use Kosher) and fresh ground pepper (to taste)
- a few pinches of red pepper flakes (depending on if you like a little spice)
- 2 eggs
- one slice of your favorite bread or an English muffin
- Sharp raw milk cheddar for serving (or a cheddar of your choice, Chris just discovered raw milk cheddar and I'm hooked!)
- Couple handfuls of fresh spinach leaves
Stick all your tomatoes in a blender and blend until pureed. In a small skillet, heat up the olive oil (about a Tbs) until it's nice and shimmery, add the garlic and red pepper flakes and cook until it starts to brown. Add the tomato puree and stir in a little tomato paste (about a Tbs), depending on how "tomatoey" you like it! Let this boil and then turn down to a simmer. Simmer for about 10-20 minutes (you might want to put a lid on to avoid splatter).
Carefully crack your eggs into the sauce and don't mess with them. Cover the skillet and let simmer for another 5 minutes. Remove from heat and let stand about 3 minutes. Use a spatula to put your eggs on some toast and pour the sauce over the top. Top with some cheese and there you have it! Deliciousness in your mouth!
For the spinach:
Put about a Tbs. of Olive Oil into your skillet (which should still have remnants of tomato puree lurking), let that heat up and add the garlic. Cook garlic for a minute or so and add the spinach. Saute until the spinach cooks down (only 30 seconds or so!) and bam, yummy, tomatoey, garlicky greens!!
